Easy, healthy quinoa salad with fall veggies

Salmon: 2 filets

Kale: ½ -1 bag pre-washed

Mushrooms: 1 container

Teriyaki Dressing: 1/3 bottle

Sesame Seeds: a few sprinkles (optional)

Green onions: a few shoots, chopped (optional)

Heat pan over medium.

Add salmon and dressing and sear the outside.


Trader Joe’s Sriracha Tofu: 1 block (if you don’t have this, use any tofu and top with Sriracha at the end)

Black Beans: 1 can

Kale: ½ to 1 bag, pre-washed

Matchstick Carrots: 1 large handful

Oil or nonstick spray for pan


Heat pan over medium-high
