I'd feel like a fraud if I called this a recipe because I'm really just giving you a combo of foods to through together and there's no cooking involved other than heating up turkey bacon. This is more of me sharing a scrumptious dinner idea.
If you’re looking for something low-carb that you can throw together in minutes, give it a whirl. We started making this a few weeks ago and we can’t get enough!
Total Thyme: 10 minutes
Spring Mix- 1 5 oz. bag
Bacon or Turkey Bacon- 1 12 oz package
Blue Cheese- ½ cup
Avocado- 1 medium to large
Dressing of choice (I like to use Tessamae’s Honey Balsamic or Brianna's Honey Mustard)
Microwave or pan cook the bacon to desired crispiness.
While bacon is cooking, peel and pit the avocado, then slice or cube the avocado.
Once the bacon is cooked, chop or tear into smaller pieces.
Grab a big handful of spring mix and add to each plate.
Top each plate with blue cheese crumbles, cooked bacon and avocado slices.
Drizzle with dressing of your choice, chop your salad, and ENJOY!
