I can’t really call this a “recipe” as much as just me sharing an easy idea for those nights when you want something good, and you want it fast. There’s no prep involved and I didn’t exactly invent the Caesar salad, but I feel compelled to share because we have this on busy weeknights all the time and it’s SUCH a quick, delicious low-carb meal.
If you buy romaine lettuce that’s ready to use, and fresh shrimp, there is hardly any prep involved and you can have dinner on the table in 5 minutes.
Total Thyme: 5 minutes
Shrimp- fresh or frozen 1lb (you'll have extra)
Romaine Lettuce-1 9oz. bag, chopped and washed, ready to use (you won't use the entire bag)
Parmesan Cheese- 1/3 cup fresh, graded or shaved
Caesar Dressing- store bought, about 6 tbsp. I recommend Ken's Steakhouse light, or Tessamae's organic creamy. Dressings can be loaded with fat and crap so make sure you read the label if you're concerned.
Prep the shrimp: If it’s frozen, defrost according to package directions. If fresh, just take the tails off and set aside.
Pour about 2/3 bag of romaine lettuce into a big bowl.
Add the cheese and dressing, and toss until evenly coated. Add more or less depending on how you like it.
Divide between 2 plate and add as much shrimp as you'd like to each plate.
THAT'S IT! YOUR DINNER IS READY. Now pour yourself a glass of wine and enjoy it!
