Smoked Salmon & Avocado Rice Bowls

If you like smoked salmon, this ridiculously easy dinner is for you! It tastes kind of like a deconstructed sushi roll. If you’re using the frozen pouches of microwaveable rice, you can throw this together in less than 10 minutes. The only “work” and time involved is poaching the eggs!



Brown Rice- 2-3 cups when cooked. 1 pouch if you're using the frozen, microwaveable kind.  

Smoked Salmon- 4 oz. package

Avocado- 1 (you’ll use about half)


Arugula- 1 handful (optional)

Soy Sauce- To taste

Sesame Seeds- 2 tsp. (optional)



Make brown rice according to package directions.
Thyme Saver Tip: Use Frozen pouch. Microwaves in 3 minutes.


Poach your eggs. If you need instructions on doing this, scroll to the bottom for a quick video.


While eggs are cooking, divide arugula between 2 bowls.


Top with rice and smoked salmon, and a couple slices of avocado on each bowl.


Add the poached eggs once they’re done.


Add soy sauce and enjoy! Sesame seeds also make a great topping for this if you like them.
