I was so hungry when I was making dinner last night that I could barely stop to take a picture of it. This dinner is perfect for nights like that....when you want something good, and you want it right now! It's one of the easiest, most delicious meals we throw together in our house. The only part that takes a little thyme is waiting for the quinoa to boil- but if you want to skip that step, you can find microwavable, pre-cooked quinoa at Trader Joe’s in the freezer aisle!
Total Thyme: 20 minutes
Chicken Sausage-1 Package (Any flavor you like. I like any of the flavors from Alfresco, Trader Joes, or Aidell’s)
Quinoa- 1 cup uncooked or 2 pouches Trader Joes microwavable quinoa
Store-bought Pesto- about ½ small jar
Spinach- 1.5 cups or half of a standard size bag
Fresh Grated Parmesan Cheese to taste
Add 1 cup of dry quinoa and 2 cups water to a sauce pan and bring to a boil. Lower to a simmer and cover, stirring occasionally.
OR if you're using microwaveable pouches, cook according to directions. This is much quicker.
When the quinoa is close to done, chop up the chicken sausage into bite-sizes and heat it up in a pan.
Add spinach and to the pan for a minute or 2 until it's wilted.
After 15-20 minutes, when the quinoa is done cooking, remove from burner. Add the spinach, chicken sausage and pesto and mix together.
Serve in 2 bowls and sprinkle the cheese to taste. You will have more chicken sausage then you need so you’ll probably have a few pieces left over.
