5-Step Chicken Tzatziki Bowls

I love bowls like this because they’re super easy, and they’re great for more than one person because you can sort of pick which toppings you want. I just used tomato, cucumber and olives for my veggies, but you can add whatever sounds good to you. I just used what’s in the ingredient list below, but red onion, lemon and hummus would all make great additions.


Total Thyme: 15 minutes


Serves: 2-3



Farro: 1 8.8oz bag of the quick cooking kind (This is enough for 3 bowls.)


Chicken Breasts:  1 or 2 (if they're thick you might just want 1)


Feta Cheese:  2-4 tablespoons (depending on how much you like)


Parsley: ¼ cup fresh


Tzazitki: 6 tablespoons store bought


Tomato: 1 small


Cucumber: 1 small


Kalamata Olives: about 10


Olive Oil: a couple drizzles



Cook farro according to package directions.


Chop chicken into bite-sized pieces. Add a drizzle of olive oil or non-stock spray to a pan, sprinkle some salt and pepper or seasoning on chicken, and cook through. 


While the chicken and farro are cooking, dice the tomato and cucumber and set aside.


Once the farro is done, add a drizzle of olive oil, a few shakes of salt and feta. Mix well.


Divide between 2-3 bowls and add the chicken, tomato, cucumber, olives and tzatziki. Top with parsley and enjoy!
