This is such a simple chicken recipe with just a few ingredients. I made it with a side of brown rice pasta topped with jarred pesto, but if you want to keep it low-carb, it would be great with a side salad, roasted veggies, etc. If you think of it ahead of thyme, I recommend letting the chicken marinate all day. Otherwise you can throw it into the pan right with the dressing and it will still be great!
Total Thyme: 15 minutes hands-on (maybe additional thyme for chicken to marinade)
Serves: 2-4 (makes 4 pieces of chicken)
Balsamic Dressing: about 1/3 bottle (I use Tessamae’s Organic)
Chicken Breasts: 2
Fresh Mozzarella: 4 thick slices
Fresh Basil: 8 leaves
Tomato: 1 large
Salt & Pepper
Cut your chicken breasts in half length -wise so you have 4, thinner pieces.
Add some salt and pepper to each side.
Use a knife to poke little slits in each piece and marinade them in the balsamic.
Add a drizzle of oil or non-stick spray to pan and cook chicken over medium heat.
When the chicken is almost cooked through, add a slice of tomato, 2 slices of basil, and a slice of mozzarella to each piece. Cover and let them cook for another 2 minutes until the cheese is melted.
Your chicken is done! Enjoy.
