Mediterranean Chicken Wraps

A photo (especially one taken by me) cannot do these justice! When I took my first bite I thought, “Where have you been all my life!?” I don’t know why I haven’t started making these sooner because they are SO easy and so good. If you like olives, feta cheese and chicken, these wraps are for you.

 

Total Thyme: 15 minutes

 

Servings: Makes 4 wraps

 

Ingredients:

Whole Wheat Wraps: 4

 

Chicken Breasts: 2

 

Balsamic Vinegar: ¼ cup

 

Baby Spinach: 1 bag

 

Roasted Red Peppers: 1 jar

 

Feta Cheese: 1 8-oz container

 

Kalamata Olives: about 12, cut in half

 

Directions:

Chop chicken breasts into strips or bite-sized pieces

 

Add some oil or non-stick spray to a pan and turn heat to medium. Add chicken and cook until no longer pink inside.

 

Add spinach and roasted red peppers to pan with chicken. Stir until the spinach has wilted.

 

Lay out your wraps and add the chicken/spinach/pepper mixture. Top each with Kalamata olives and feta.
