Edamame Sriracha Rice Bowls

This healthy dinner is a cheap, quick and easy weeknight staple in our house because we can throw it together in 10 minutes or less. The hardest part is scrambling the eggs. 


If you like sriracha sauce, you'll love this. If you don't like sriracha, you'll still love it! Just replace the sriracha with soy sauce or a little sesame oil.



Total Thyme: 10 minutes



Brown Rice- 2-3 cups when cooked. Frozen pouches are fastest!

Edamame Beans- 1 cup shelled. Can be frozen or fresh.

Spinach- 2 cups fresh


Sriracha- to taste



Heat a frying pan or wok up with non-stick spray


Make brown rice according to package directions.Thyme Saver Tip: Use frozen brown pouch. Microwaves in 3 minutes


Heat up Edamame According to Package Directions.


Scramble 2 eggs in pan.


Once eggs are cooked, divide rice between 2 bowls and add edamame, spinach, scrambled eggs and sriracha to taste. The spinach will wilt on it's own with the other hot ingredients.


Mix together and enjoy!
