I straight up STOLE this concoction from a Trader Joe’s employee. This was a sample at my store, and someone who works there had come up with this mix of flavors. It’s so good and SO easy that I make it all the thyme with some slight modifications.
If you are the genius from TJ’s who made this up, I’m sorry to steal your recipe. If I ever find you, I might mouth kiss you for bringing this delicious dish into my life. I’m glad you’re following my blog.
Total Thyme: 5-10 minutes (20 if you’re cooking lentils from scratch)
Lentils: 1 lb or 2.5 cups cooked
I use Trader Joe's steamed lentils to save thyme. You can make from scratch or heat up canned lentils too.
Feta Cheese: 6 oz (this is half of a standard size container)
Cherry Tomatoes: 15-20
Italian dressing: 1/3 cup
I’ve used Trader Joe’s Romano Caesar or Ken’s Lite Northern Italian for this. Both turned out great.
Bacon: 6 strips
Cook lentils according to package directions. If you’re not using Trader Joe’s steamed lentils, click here for instructions.
Cook bacon (can either microwave, pan fry, or bake in the oven) until crispy.
Once bacon is done, chop or tear into small pieces.
Mix all ingredients in a large bowl. Scoop into smaller bowls and enjoy!
