No-Bake Cashew & Oat Balls

If you like Cashew Butter, you’re in for a treat! II don’t mean to be redundant with the kind of posts I put up, but I love quick and easy breakfast/snacks that I can grab on-the-go, so I like to experiment with them. I'm eating one as I write this post, and it's like a delicious little cookie. 

 

They’re ready in less than 10 minutes, don’t require any baking, and they have healthy ingredients. Plus they’re less messy than the other energy bites I posted last week, if you happened to try those!

 

Servings: Makes about 10 balls

 

Total Thyme: Less than 10 minutes hands-on (with about 15 minutes in the fridge)

 

Ingredients: 

 

Rolled Oats- 1.5 cups

 

Cinnamon- ¼ tsp

 

Salt- ¼ tsp

 

Cashew Butter- ½ cup

 

Maple Syrup- ½ cup

 

Coconut Oil- 2 tbsp, melted 

 

Vanilla- 1 tsp.

 

Semi-Sweet or Dark Chocolate Chips- a handful (Optional)

 

Directions:

Mix the first 3 dry ingredients together in a large bowl so they’re really combined, then add all the rest of the ingredients.

 

Add the cashew butter and coconut oil to a small saucepan, heat up over low heat, and mix together. 

 

Add the cashew butter and coconut oil, maple syrup, vanilla, and chocolate chips to the bowl and mix really well. 

 

Stick in the refrigerator for about 15 minutes.


Remove and roll into balls- about 2 inches across.

 

Enjoy- and keep what you don’t eat in the fridge!
