Sriracha Tofu with Black Beans and Kale

Trader Joe’s Sriracha Tofu: 1 block (if you don’t have this, use any tofu and top with Sriracha at the end)

Black Beans: 1 can

Kale: ½ to 1 bag, pre-washed

Matchstick Carrots: 1 large handful

Oil or nonstick spray for pan



Heat pan over medium-high

Add Matchstick carrots and sauté 1-2 minutes

Chop tofu into bite-sized squares and add to pan for  another minute

Add black beans and heat for another minute

Add kale and sauté until wilted.

That's it! Dinner is ready!
