Strawberry Basil Pasta

This is such a great light refreshing take on pasta for the summer! It’s great for a big group, as a main, or a side, and it’s delicious hot or cold. I made this for a group and topped with chicken. 


Total Thyme: 15 minutes

Serves: 4-6




For the Pasta

Rotini or Penne Pasta : 8 oz (I use Gluten Free)


Crumbled Goat Cheese: 4 oz


Strawberries: 1 lb

Cucumber: 1 medium


Fresh Basil: 2 heaping handfuls


For the Dressing

Salt: a couple shakes


Pepper: ½ tsp


Olive Oil: 2/3 c

Balsamic Vinegar: ¼ c


Honey: 1 tsp




Cook pasta according to package directions. Be sure to add several shakes of salt to the water to add flavor.

While pasta is cooking, wash and chop strawberries and cucumber into bite size pieces.


Chop basil loosely.


Make the dressing by whisking all ingredients well in a bowl.


When pasta is done cooking, strain and add to a large bowl.


Top the pasta with your produce, goat cheese and dressing, and toss together really well so everything is evenly distributed. Add more salt to taste.
