I keep seeing recipes on Instagram and Pinterest for “Egg Roll In a Bowl” and “Crack Slaw,” and they look so good, so I had to try it for myself! I based mine off a recipe Ketogasm. The recipe usually calls for ground pork, but that’s not my style so I made it with lean ground beef. You could use chicken or turkey too, and it would still be delish.
It’s comical that I made something from the Keto diet, considering that hours earlier I was out to brunch drinking beer and eating French toast. All things in moderation, right?
Anyway, I made it, took a bite, and all I could say was “Holy Shit.” It was so good, so easy to whip up, and only took 1 pan. This is definitely going to be a new regular in our house on the nights I’m looking for a low-carb option!
NOTE: You’ll want a big skillet or pan for this!
Total Thyme: 15 minutes
Lean Ground Beef, Turkey or Chicken: 1 lb
Pre-shredded Cabbage: 1 ½ bags, 8 or 9 oz each (I used Trader Joe’s Shredded Red Cabbage with Carrots.)
*You could also just buy a head of cabbage and shred it yourself, but that’s not very Thyme-Saver friendly!
Shredded Carrots: 1 handful (only if there aren’t carrots in cabbage mix)
Onion: ½ cup, diced
Thyme Saver Tip: Get the onion pre-diced
Soy Sauce: ¼ cup, low sodium
Ground Ginger: 1 tsp.
Sesame Oil: 1 tbsp.
Garlic: 1 clove (minced. I buy the squeezable kind and just use a dollop)
Green Onion: 3 stalks
Add some non-stick spray to your pan. Heat on medium, add meat and brown .
Once the meat is browned, add the diced onion and sesame oil. While that’s still cooking…
Mix your ginger, soy sauce and garlic to a small bowl.
Add the cabbage to the pan, then cover everything in your soy sauce mixture and give it a good toss.
Chop your green onion.
Once the cabbage is tender and everything is well mixed together, divide among plates and top with the green onion.
