These bowls are delicious, filling, low carb, and SO easy to throw together! You could also add cheese or beans, but we kept it simple and loved them.
Per usual, Trader Joe’s makes this one super easy with their already seasoned Carne Asada and their frozen Riced Cauliflower.
If you don’t get pre-seasoned steak, just get whatever cut of steak you want and season ahead of time with something like this.
And if you don’t have a Trader Joe’s near you, lots of restaurants sell pre-made cauliflower rice so you don’t have to do it yourself. If you do decide to make your own riced cauliflower, here are instructions from The Minimalist Baker.
Total Thyme: 20 minutes
Trader Joe’s Carne Asada Autentica: 1 package (you will have leftovers)
If you don’t have this, just buy about a ½ lb of your favorite kind of steak and season with Carne Asada Seasoning ahead of time.
Riced Cauliflower: 12 oz
Green Pepper: 1
Lime Juice: 4 tbsp
Lemon Juice: 2 tbsp
Canola Oil: 4 tbsp
Fresh Cilantro: 1 bunch
Fresh Guacamole: 2 big scoops (depending on how much you like).
Make your steak according to package directions. While it’s cooking….
Slice your green pepper and chop cilantro.
Heat 2 tbsp canola oil in a pan over medium heat. Add your green pepper and sautee until soft.
Set aside green pepper and add 2 more tbsp canola oil to the pan.
Heat and add the cauliflower, stirring occasionally for about 3 or 4 minutes, until it’s soft, then add the lemon juice, lime juice, cilantro, and another drizzle of canola oil. Stir well and continue to cook until really soft.
Once the steak and cauliflower are done, divide the riced cauliflower between 2 bowls, top with the steak, peppers, guac, and any other toppings you like!
