Mediterranean Breakfast Pita

If you’ve ever been to DEZ in NYC, you know they have AMAZING and delicious Mediterranean food. I had their Breakfast Pita and let me tell you, it was a party in my mouth. I wanted to re-create some version of it, so I took a look at the ingredients, and one of the secrets is Zhoug sauce. Lucky for me, Trader Joe’s has this spicy and delectable green sauce already made, so it was easy to come up with a quick Thyme Saver recipe for this!

Now let me be clear, you need to go to DEZ and get their breakfast pita. This is no substitute, but it is a DAMN delicious breakfast you can make at home.


Total Thyme: 15 minutes


Servings: Makes 4 pita halves (it’s so good you’ll probably want more than 1)



Eggs: 4


Chopped Romaine Lettuce: 2 handfuls


Roma Tomatoes: 1, diced

Chopped  Fresh Parsley: 4 tablespoons


Olive Oil: a drizzle for the salad portion, enough to coat your pan for 3 fried eggs


Lemon Juice: about 1 tbsp.


Pita Bread: 2 Pitas. The fresher, the better! I used whole wheat.


Zhoug Sauce: 4 Tablespoons



In a bowl, make a small salad by combining your romaine lettuce, diced tomato. Top with a sprinkle of your parsley, a drizzle of olive oil, and your lemon juice. Toss and set aside.


Cut your pitas into halves .


Fry 4 eggs in olive oil over low-medium heat until they’re cooked to your liking. I like the yolks runny . (I did them one at a time in a small pan).



When your egg is done and you’re ready to assemble each pita, place your pita on a paper towel and microwave for 10 seconds to make it extra soft. (Optional)

Spread the Zhoug sauce on the inside of ½ of each pita, add your egg, and a scoop of salad. Enjoy!
