5-Ingredient "Angel'ed" Eggs

Need an easy recipe to bring to a Super Bowl party? Deviled eggs are an easy classic when you need an appetizer for a party, but they’re not the healthiest. I wanted to make them a little less of a guilty pleasure, so I swapped out the regular mayo for Avocado Mayo in this basic, super easy, 5-ingredient recipe.

My favorite avocado mayo is Primal Foods, but you can find other kinds at most grocery stores these days.

Here’s a tip for making hard-boiled eggs easier to peel: Add a table or 2 of baking soda to the water!
 

Total Thyme: 25 minutes (about 15 total hands on)

Servings: Makes 24 

 

Ingredients:

Eggs- 1 dozen

Avocado Mayonnaise- 2/3 cup

Lemon Juice- 2 tablespoons

Dijon Mustard- 1 tablespoon

Sale & Pepper- a few shakes of each

Chopped Chives- 2 tablespoons

 

Directions:

-Hard boil your eggs. For best results, add some baking soda to the water and let them boil for about 10 minutes.

-Once your eggs are done, Let them cool and peel them

-Chop each egg in half, lengthwise

-Scoop out the yolks and add all but the yolks from 2 or 3 egg halves to the mixing bowl

-Add the mayo, lemon juice, mustard, salt and pepper to the yolks and mix well

-Line your egg halves up on a dish or  tray and scoop a glob of the mixture into each

-Garnish with chives and enjoy!
